Easy, Crockpot Chicken Curry

There has been a recent request for some easy dinner recipes. So many of us work long, hard hours at work and come home with no energy to cook a healthy meal. 

Here is one of my favorite Chicken Curry recipes that takes so little time to prepare and tastes amazing. It is full of protein, healthy fats and nutritious vegetables- a completely balanced meal!

Also, I discovered that Trader Joes sells "10 minute" cooking grains like Farro, Wheatberries, quinoa and rice. To make this meal heartier, I cook any of those grains above (just 10 mintues!) and serve the curry over it. 

As with any of the recipes I post, I want to emphasize the importance of the environment that you eat in on your health. Always try to eat in a calm, non-stressful place and mindset. Give thanks for your food and for your health. That positivity can do wonders :)

Ingredients

  • 1 lb chicken breasts
  • 3 tbsp curry powder mild
  • 1 tsp turmeric powder
  • 2 tsp salt and pepper
  • 2 15-oz cans coconut milk full fat
  • 1 c water
  • 2 tbsp butter
  • 2 cloves garlic crushed
  • 4 c sweet potatoes cut into 1-inch cubes
  • 1 medium sweet onion cut into 1-inch pieces
  • Red Chili Pepper Flakes
  • Cilantro optional

Instructions

  1. In a small bowl combine curry powder, turmeric, salt and pepper. Toss to combine.
  2. Place chicken breasts in a 4-6 quart slow cooker.
  3. Add coconut milk and water and make sure to lift up the chicken breasts to prevent the chicken from burning.
  4. Add butter, garlic, and the bowl of seasoning ingredients. Stir the liquid to incorporate the seasonings.
  5. Add sweet potatoes and onions. Stir to combine.
  6. Cover slow cooker and set to Low for 6-8 hours, or High for 4-6 hours.
  7. Check on curry during the last hour of cooking and stir the ingredients if the curry is starting to stick to the sides.
  8. Serve chicken curry with "10 minute" farro, barley, quinoa or rice and additional cilantro, if desired, and enjoy!
