Fresh and Healthy Fish Tacos

Looking for a fresh, healthy summer dinner? Here is a great recipe for fish tacos that I use often in the summer when veggies and herbs are in season!

This meal is so simple and delicious. Want to make it even more enjoyable? Invite a couple of your closest friends over and eat outside on your patio or deck. Food tastes better with awesome people and fresh air :)

(Feel free to substitute the fish for chicken or beef)


  • Corn Tortillas
  • 1lb shrimp
  • 1 Avocado 
  • 1 Tomato
  • 1/2 Red onion
  • 1/4 cup cilantro
  • 1 lime
  • 2 cups baby lettuce
  • 1 cup corn
  • 2 tbsp butter
  • Salt and Pepper
  • Red Chili Flakes


-Heat 2 tbsp of butter in pan. Add shrimp and season with salt, pepper and red chili flakes. Cook until shrimp is translucent and pink (about 7-8 minutes). Put aside.

-Cut 1 cup of corn off cob and add to pan. Cook about 4 minutes. Add to plate of shrimp.

-Chop onions, cilantro, tomato, avocado and baby lettuce. Put aside on separate plate. Squeeze lime on top along with salt and pepper.

-Toast corn tortillas and assemble.
